Multiband’s Holiday Cookbook: Mint Chocolate Chip Cookies by Melissa Mitchell – Fort Collins

Here is the recipe:

Prep Time: 30 Min, Start to Finish: 30 Min, About 3.5 dozen cookies

1 1/3 Cups sugar

¾ Cup butter or margarine, softened

1 Tablespoon finely chopped fresh mint leaves

1 Egg

2 Cups all-purpose flour

1 Teaspoon baking soda

½ Teaspoon salt

1 Package (10 oz.) mint chocolate chips (1 ½ cups)

First, heat oven to 350 F. In large bowl, beat sugar, butter, mint and egg with electric mixer on medium speed, or mix with spoon. Stir in flour, baking soda and salt. Stir in chocolate chips.

On ungreased cookie sheet, drop dough by rounded tablespoonfuls about 2 inches apart. Bake 11 to 13 minutes or until golden brown. Cool 1 to 2 minutes; remove from cookie sheet to cooling rack.

You can also try raspberry chocolate chips!
